The wines of Valdorcia Terre Senesi stem from the rediscovery of native grape varieties such as Ciliegiolo, Pugnitello, Colorino, and Fogliatonda, but above all from the cultivation of Sangiovese, the Tuscan grape variety par excellence, which allows us to create blends of strong character and high quality. These wines are aged in oak barrels of various toasting levels and then refined in the bottle. All of our wines belong to the Orcia DOC appellation.
A wine that is a true expression of its terroir
Grown organically, it follows a sustainable approach that respects the rhythms of nature. Every action in the vineyard stems from listening to the soil, the climate, and the seasons, without forcing anything. We work with care and patience to preserve this land for future generations. Each bottle tells a unique story, offering an experience that goes beyond simply tasting the wine.
Our oil
We have been producing extra virgin olive oil since the 1990s.
The olive harvest begins in October, at the onset of veraison, when the fruit yields its best oil, with very low acidity and above-average polyphenol levels. The harvest is done by hand or with the aid of harvesting machines. The olives are immediately cleaned, placed in ventilated crates, and transported the same day to the certified organic mill, where they are cold-pressed.
We store the oil in stainless steel containers in protected areas, allowing it to settle naturally before releasing it to the market.
Our grappa
Our grappas are handcrafted and made exclusively from grape pomace from the Valdorcia Terre Senesi region, without the addition of lees, flavorings, or distillates from other sources.
- Raw material: Sangiovese grape pomace produced and vinified by the Val D’Orcia Terre Senesi farm in Castiglione d’Orcia (SI).
- Production method: batch distillation in double-process water-bath stills, with redistillation of the heads.
- Serving temperature: no lower than 18°C, after allowing the wine to breathe in the glass.
- Recommended glass: a medium-sized tulip-shaped glass made of fine crystal, to best appreciate the distillate’s sensory characteristics.
