The grapes are hand-harvested and carefully selected. The grapes are fed into the press as whole clusters. After gentle pressing, the liquid is transferred to a stainless steel tank, where it ferments for about 3 days. It is then racked to remove impurities and left to ferment in oak for one month. Bottled in the spring following the harvest.
