A white wine with the maximum freshness

The grapes are manually harvest, put in boxes, pressed, cleaned and placed in the fermentation tank at low temperature. The must stays in contact with the skins for about 12 hours to get a good aromatic varietal and territorial transfer. After this process, it begins the alcoholic fermentation at a controlled temperature, which continue typically for about 15 days. This process is followed by racking and lees contact. In spring, when the wine has clarified in a natural way, it is bottled, where it remains max. sixty days to appreciate the most freshness and fragrance
